ZUCCHINI PINEAPPLE BREAD (CAKE) | |
3 eggs 1 c. oil 2 c. sugar 3 c. flour 3 tsp. vanilla 1 tsp. each baking powder, soda & salt 1/2 c. raisins 3 tsp. cinnamon (I divide this with nutmeg & a little cloves & allspice) 1 c. chopped nuts 1 (8 oz.) can drained pineapple 2 c. grated zucchini Beat eggs until light and fluffy. Add oil, sugar, vanilla and zucchini; mix well. Add dry ingredients and mix well. Add raisins, pineapple and nuts; blend. Bake in greased and floured bundt pan at 350 degrees for 1 hour and 10 minutes or until toothpick comes out clean. Can be baked in two greased and floured bread pans for about 1 hour. |
