BUTTERMILK PIE 
1 c. sugar
3 eggs, separated
2 c. buttermilk
1/4 tsp. salt
3 tbsp. flour
2 tsp. vanilla
1/2 c. melted butter
1 unbaked pie crust (9" or deep dish)

Heat oven to 425 degrees. Chill pie crust. Mix sugar, salt, flour and add egg yolks which have been slightly beaten, buttermilk, butter and vanilla. Beat egg whites until they peak and fold into mixture. Pour into chilled pie crust and bake at 425 degrees for 10 minutes. Reduce heat to 325 degrees and bake 30 minutes or until knife comes out clean. Pie should be golden brown.
