RHUBARB MUFFINS 
1/2 c. brown sugar
1/4 c. white sugar
1 egg
1/3 c. oil
1/2 c. sour milk (1/2 tbsp. vinegar in bottom of cup. Add reg. milk)
1 1/4 c. flour
1/2 tsp. cinnamon
1/2 tsp. salt
1/2 tsp. baking soda
1/2 tsp. vanilla
1/4 c. nuts, chopped - optional
1 c. rhubarb, cut fine

Mix and pour into muffin tins.

TOPPING:

1/4 c. sugar
1/4 tsp. cinnamon
2 tsp. butter

Mix. Spoon over muffins. Bake at 325 degrees for 25 minutes.
