APPLE KUCHEN 
1 1/4 c. sifted all-purpose flour (sift flour before measuring)
1/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. salt
1/4 c. butter
1 egg, beaten
1/4 c. milk
1 tsp. vanilla extract
5 c. thinly sliced, pared tart apple

TOPPING:

1/4 c. sugar
1 tsp. cinnamon
1/4 c. butter, melted

1/3 c. apricot preserves
Whipped cream, if desired

Sift flour with 1/4 cup sugar, baking powder and salt. With pastry blender, cut in 1/4 cup butter until mixture resembles coarse crumbs. Add beaten egg, milk and vanilla, stirring with a fork until mixture is smooth.

Spread evenly in bottom of 9x13 inch baking pan, lightly greased. Arrange apple slices, thin sides down and slightly overlapping, in parallel rows over the batter.

Make topping: Combine sugar, cinnamon and melted butter and sprinkle over the apple slices. Bake 35 minutes at 400 degrees or until apple slices are tender. Remove to wire rack. Mix apricot preserves with 1 tablespoon hot water. Brush over apples. Serves 12.
