CANDIED ORANGE PEEL 
Peel of 6 lg. oranges
1 tbsp. salt
4 c. water
3 c. granulated sugar
1/2 bottle red food coloring
Granulated sugar

Cut oranges into quarters and remove the peel. Cover peel in a saucepan with salt and water, and weigh it down with a plate so it will stay covered. Let stand overnight.

Drain and wash peels thoroughly. Cover with cold water and bring to a boil. Repeat process 3 times. Cut peel into strips with scissors.

Combine sugar and enough hot water to just cover the peel. Cook slowly about 30 minutes or until peel is transparent. Add food coloring and soak.

Drain and roll in granulated sugar. Dry on a wire rack.
