CANDIED ORANGE PEEL 
Peel of 4 medium oranges
1 c. sugar
Water

Remove peel in quarters and pick off all stringy fibers. Wash well and scrape off dark sections on outside skin. Cover with cold water in pan and bring to boil. Cook until the peel is tender. Remove peel, strain water and save 1/2 cup. Add sugar to the orange water and boil until it forms a soft ball.

While syrup is cooking, cut the peel with scissors in pieces lengthwise. Add peel and stir to keep from scorching. Remove peel or drain syrup and drop each piece of peel separately into fine granulated sugar coating each piece well. Shake off excess and lay each piece out on paper to cool and dry.
