CANDIED WALNUTS 
For the nuts, use use whole or half pieces.

1 cup sugar
1/2 cup water
1 tsp. cinnamon
1/2 tsp. vanilla
2 1/2 cups walnuts or pecans (not chopped)

Combine sugar, water and cinnamon in a saucepan and cook until soft ball stage (238°F on a candy thermometer). Remove from heat, add vanilla and nuts, mix together and pour onto waxed paper until cool.

Once cool, break apart into pieces.

Cooks Note: Use of a candy thermometer is recommended.
