CREAM OF BROCCOLI SOUP 
1 med. onion, chopped
6 tbsp. butter
6 tbsp. flour
1 lg. chicken broth (32 oz.)
1 (20 oz.) frozen broccoli, chopped, thawed
1 c. milk
1 can cream of chicken soup
1 tsp. pepper

Brown onion in butter until tender. Add flour, stirring well, gradually stir in broth and broccoli. Cook over medium heat until tender, stirring frequently. Reduce heat, stir in milk, cream of chicken soup and pepper.

This recipe was amazing! We made it for Thanksgiving for 4 guests,and then we were expecting 2 more guests, so we just added more milk and broccoli, so if you need more, just add more milk. And I used cream of broccoli soup instead of cream of chicken soup, and instead of 1 cup of milk, I used half a cup of milk and half a cup of cream.

We make chicken noodle soup from scratch a lot once the weather gets cold. Having the chicken soup stock it is extra easy to make this cream soup off of our monthly pot of made-from-scratch chicken soup. I think 1 tsp pepper is a bit much. You can see that much pepper in every bite. I recommend reducing the pepper by 1/2 to just 1/2 tsp. pepper.
