CREAM OF BROCCOLI SOUP 
3/4 c. chopped celery
1/2 c. carrots, chopped
1/2 c. onion, chopped
1 garlic clove, cut fine
20 oz. pkg. broccoli
1 1/2 c. cottage cheese
1 1/2 c. milk
1 can cream of mushroom or chicken soup

In a 4-quart microwave casserole dish, microwave the celery, carrots, onion and garlic in 1/4 cup of water for 3 minutes on high. Add broccoli to the above and microwave for 9 minutes on high.

In blender blend the cottage cheese until smooth. Add the milk; add the cream of mushroom or chicken soup and blend. Add the blended stock to vegetables and microwave on low for about 9 minutes (do not boil). Salt and pepper to taste.

Since microwave ovens vary in power, you may need to adjust your cooking time.
