NEW ENGLAND CRABMEAT CASSEROLE 
Cover the bottom of a casserole dish with White Sauce (see recipe below); add Maine Crabmeat and then cover again with White Sauce.

Some may wish to lightly crumb the top.

Bake in 375 degree oven until sauce bubbles. Serve with lemon.

WHITE SAUCE:

1 qt. milk
1/4 lb. butter
1/4 med. pepper, minced
1/2 c. flour
1/4 c. sliced almonds

Double boil milk, melt butter and brown the almonds in the butter.

Strain almonds, save butter and add pepper. Cook until tender.

Add flour to butter to make a roux.

Add roux to hot milk and stir until thickened.
