BANANA NUT LOAF 
1/2 c. shortening
1 c. sugar
2 eggs
2 c. flour (all purpose)
1 tsp. baking soda
1/4 tsp. salt
1 c. mashed bananas
1/2 c. chopped nuts
1 tsp. vanilla

Cream shortening and sugar until fluffy. Add eggs one at a time beating well after each addition. Sift flour, soda and salt together and stir quickly into creamed mixture. Stir in bananas, nuts and vanilla. Pour into greased loaf pan.

Bake in in 350 degree oven 1 hour or until center is firm. Cool 5 minutes. Turn out onto wire rack. Wrap in waxed paper or plastic. Freezes well.
