MARY'S SCRATCH PANCAKES 
1 1/2 c. self-rising flour
1 egg
1 tbsp. sugar
1 tsp. vanilla
1 tbsp. oil
1 1/2 c. sweet milk

Mix together; cook and enjoy with favorite syrup.

Instead of milk I used heavy whipping cream and water until the batter was pancake ready and threw n some chocolate chips . Very delicious I I also used cinnamon and sugar instead of just sugar :)

Amazing! Some of the best pancakes I've ever made! The only thing different I did, was use regular 2% milk, and let butter melt in the pan before pouring in the batter. They're wonderful!!

My 3 yr old daughter insisted we have pancakes but I did not have any pancake mix so we tried this recipe. I did not have sweet milk nor did I have any sugar so we substituted for 2 % milk and brown sugar and the pancakes was delicious. I will cook pancakes using this recipe for the whole family on the weekend and I am sure they will find them delicious as well.
