MARY'S SCRATCH PANCAKES 
1 1/2 c. self-rising flour
1 egg
1 tbsp. sugar
1 tsp. vanilla
1 tbsp. oil
1 1/2 c. sweet milk

Mix together; cook and enjoy with favorite syrup.

Just add 1/4 tsp. of baking soda if you do not have self rising flour and you will have the most amazing pancakes ever.

Excellent for crepes nonrising and no baking soda, added more milk, and fantastic for pancakes too! Thank you for sharing. We prefer crepes, chopped baked apples with butter, cinnamon, and sugar for filling and viola!

Excellent. Just had my three boys and their friends wolfing them down. I couldn't use my usual recipe as I am out of baking powder. I saw this, there is no way these come out flat if you use self-rising flour. Very light and very fluffy. I used melted butter in place of the oil and 2% milk.
