MARY'S SCRATCH PANCAKES 
1 1/2 c. self-rising flour
1 egg
1 tbsp. sugar
1 tsp. vanilla
1 tbsp. oil
1 1/2 c. sweet milk

Mix together; cook and enjoy with favorite syrup.

This was so easy and delicious. Also liked that it didn't make a ton of pancakes. I always freeze extras thinking I'll use them later and it just never happens. I also put a bit of cinnamon in and they were great. This one is a keeper!

I usually use Bisquick for pancakes. I ran out and I ran out of flour. All I had was some self rising flour. A fortuitous circumstance. I've never used such thin batter before, but the self rising flour did the trick. I don't understand the comment about this recipe being heavy. Mine were thick and fluffy. I also used Cinnamon, about 1/2 teaspoon. I also added 1/2 cup of Nestle mini Chocolate chips and 1/2 cup of Ocean-spray dried cranberries. Mmmmm. To those who try this recipe be sure your skillet is hot and the pancake looks like the face of the moon when you flip it. Also used Raspberry Syrup. It was great!

I changed out the oil in the recipe for melted butter! Mad them really fluffy and buttery :) Great recipe!!!

My 3 yr old daughter insisted we have pancakes but I did not have any pancake mix so we tried this recipe. I did not have sweet milk nor did I have any sugar so we substituted for 2 % milk and brown sugar and the pancakes was delicious. I will cook pancakes using this recipe for the whole family on the weekend and I am sure they will find them delicious as well.
