CARAMEL APPLE DESSERT
1 1/4 c. all-purpose flour
1/4 tsp. salt
1/3 c. shortening
4 to 5 tbsp. cold water
1 c. brown sugar
1/2 c. all-purpose flour
1/2 c. quick rolled oats
1/2 c. butter
1/2 c. sugar
3 tbsp. all-purpose flour
1 tsp. cinnamon
1/8 tsp. salt
6 c. thinly sliced peeled apples
1/2 c. chopped pecans
1/4 c. caramel topping

For pastry: In a bowl, stir together 1 1/4 cups flour and 1/4 teaspoon salt. Cut shortening into flour. Sprinkle 1 teaspoon of water over flour. Mix. Keep adding 1 teaspoon of water until mixture is moist. Form dough into a ball; set aside. Crumb topping: Stir together brown sugar, 1/2 cup flour and oats. Cut butter into mixture. Set aside.

Roll out dough into a 12-inch circle. Transfer to a 9-inch pie pan. Trim; crimp edge as desired. In a large mixing bowl, stir together sugar, 3 tablespoons flour, cinnamon and salt. Add apples and toss until coated. Transfer apple mixture to the pastry lined pie plate. Sprinkle topping over apples.

Bake at 375°F for 50 minutes or until top is golden brown. Remove from oven. Sprinkle with pecans, then drizzle with caramel topping.

Absolutely delicious! The recipe was a bit difficult for a very novice cook, but the result was completely worth it. I hope to make this for my family when we get together for Christmas. Be sure to check the oven well before the time is up, as mine burned a bit on the top even though I checked it probably 8-10 minutes before the time was up (I could get it off because it was just some of the crumb toppings). Otherwise, its wonderful!
