SPANAKORYZO (SPINACH AND RICE) 
1/2 c. uncooked rice
1 med. or lg. onion, chopped
1/3 c. olive oil
2 c. boiling water
1 1/2 tsp. salt or less
1 lb. fresh spinach
1 can Hunt's tomato sauce
1 or 2 cloves garlic

Saute rice, onion, and garlic in olive oil, stirring occasionally, 15 minutes. Then add boiling water and salt, cover and simmer 10 minutes. Wash spinach, cut in half lengths. Add to rice with tomato sauce and mix thoroughly. Cover and continue to simmer, stirring occasionally until water is absorbed. Makes 4 to 6 servings. Enjoy.
