SPINACH AND RICE 
1 lb. spinach
1 c. tomatoes
1 onion, chopped
1/2 c. olive oil
1/2 stick butter
2 tbsp. parsley
1 tbsp. salt
1/2 tsp. pepper
1 tbsp. mint leaves
1 c. water
1/2 c. rice

Wash and cut up spinach. Saute onion in oil and butter. Add all the other ingredients. Add water and rice and cook for 10 minutes, then add the spinach and tomatoes. Let cook until rice is tender.
