FRENCH CREPES (QUICK AND EASY) 
Easy but delicious!

2 1/4 cups milk, divided
2 cups flour
2 tbsp. oil
2 eggs, beaten
1/4 cup sugar
pinch of salt

Pour 1 1/2 cups of milk slowly into the 2 cups of flour while stirring. Keep stirring and add 2 tablespoons oil, 2 beaten eggs and 1/4 cup of sugar. Now add the rest of the milk. The batter must be fluid. If not, add a little more milk until it's fluid.

Take a frying pan and oil it with a little butter or 1/4 tsp. of oil. Pour a small amount of batter on just enough to cover the bottom of the pan. When it begins to bubble or to yellow around the edges flip it over to the other side and let it cook for a few seconds.

You can spread chocolate, jelly, butter or anything you think tastes good. If you do not use all the batter then you can store it in a refrigerator and cook later. If you do not finish all the ready made ones then you can store those in the refrigerator as well and heat in the microwave or on a warm frying pan for a few seconds.

Makes about 25 crepes.
