3/4 cup all-purpose flour 1/2 tsp. salt 1 tsp. baking powder 2 tbsp. confectioners' sugar 1 tsp. grated orange peel 1/2 tsp. grated lemon peel 2 eggs, slightly beaten 1 (7 oz.) bottle 7-Up soda butter Sift together flour, salt, baking powder, and confectioners' sugar. Add orange and lemon peel, eggs, and 7-Up. Beat quickly until well blended and fairly smooth. Place about a teaspoon of butter in a small frying pan and heat until butter bubbles. Pour in enough batter to coat bottom of pan with thin layer. Cook until delicately browned on under side; turn and cook on other side. Remove from frying pan. Roll up; place in chafing dish to keep warm while making remaining crepes (or cover with foil and place in 300°F oven). Submitted by: Dennis |
