CREPE BATTER 
4 eggs, beaten
1/4 tsp. salt
2 1/4 c. milk

Add salt and milk to beaten eggs. Gradually add 2 cups flour. Add last 1/4 cup melted butter. Cook like pancakes in a small fry pan. Make them as thin as possible.

TURKEY ENCHILADA CREPES
2 tbsp. cooking oil
1 clove garlic
1 onion, chopped

Saute. Add:

1 (4 oz.) can chopped green chiles
Lg. can tomatoes, chopped
1 tsp. salt
1/2 tsp. oregano
1/2 c. water

Simmer, uncovered, for about 15 minutes. Spread cooled crepes and divide following ingredients evenly on crepes:

3 c. finely chopped cooked turkey
2 c. dairy sour cream
2 c. grated Cheddar cheese

Roll up. Arrange in shallow baking pan. Pour liquid evenly over all the crepes. Heat in 350 degree oven for 20 minutes.
