GERMAN PFANNKUCHEN (Crepes) 
3 eggs
1 c. flour
1 c. milk
1/2 tsp. vanilla
Little salt

Pour a small amount onto hot skillet, pick up skillet and turn to spread batter. Cook to barely brown and turn. Serve as breakfast with jam, spread and roll up sprinkle with powdered sugar. Serve as dessert with fruit and cream.

My mother would make a chicken broth, take some of the Pfannkuchen and slice into thin strips and drop into our waiting bowls of broth. Absolutely delicious. The ones that didn't go into the soup were slathered with raspberry preserves, rolled up and eaten as a treat.

My grandmother has been making German pancakes for as long as I can remember. I just made them for the first time today using this recipe. She said it was very good but she gave me a few hints she picked up over the years. When making the batter, add just a bit of water. Also, if you aren't planning on wrapping something inside of it, break it up into smaller pieces as you are cooking, makes it taste better. Just a side note, it doesn't mention using butter on the pan when you make it, but it doesn't seem like a bad idea. The recipe makes about two large pancakes for those who are curious.

Apart from that, the recipe was great!

I've been looking for the pfannkuchen recipe for the longest time. This recipe takes me back in time about 60 years. My mother made them and we ate them sometimes with grape jelly spread on them, rolled up and cut into slices -- like a jelly roll. The comments about slicing it real thin and making soup with it -- as kids, we called it "rubber band soup", and like all kids we had our own names for just about everything. Thanks for the recipe -- it's comfort food to me

Instead of water use a full cup of milk. For filling add some cut cheese and ham into the middle. Fold sides over top and flip to melt cheese. Pour syrup on it when serving. Mmm good

If you have leftovers, roll them up and cut them into strips. I freeze them that way in small portions which you put into hot broth to eat as soup.
