RAW CHOPPED GREENS | |
1 pkg. raw spinach (about 4 c.) 4 to 6 slices bacon 1/3 c. vinegar 2/3 c. water 3 tbsp. sugar Pinch salt Pinch dry mustard 1 to 2 hard boiled eggs, optional 1 lg. or 2 sm. eggs, beaten 1 bunch green onions, optional Wash spinach, remove stems and tear into bite size pieces (not too small and DO NO CUT). Drain. Fry bacon until crisp. Remove from pan and drain on absorbent paper. Pour fat from pan, reduce heat to low and return 2 tablespoons fat to pan. Combine vinegar, water, sugar, salt and mustard and pour slowly into beaten eggs. Add egg mixture to fat in pan, stirring constantly until slightly thickened. Crumble half of bacon into dressing and pour over greens. Garnish with remaining bacon and hard boiled eggs. If the onions are used they should be sliced and added to the spinach. |
