OAT BRAN MUFFINS 
1 1/4 c. oat bran cereal, uncooked
1 c. whole wheat flour
2 tsp. cinnamon
1 tsp. baking powder
3/4 tsp. baking soda
3/4 c. unsweetened applesauce
1/4 c. honey
1/4 c. molasses
1/4 c. vegetable oil
1 tsp. vanilla
1 egg white
1/2 tsp. salt; optional
1/4 c. raisins
1/4 c. nuts

Heat oven to 375 degrees. Line 12 muffin cups with baking cups or grease. In medium bowl, combine bran, flour, cinnamon, baking powder, soda, and salt. In large bowl, combine applesauce, honey, oil, egg white, and vanilla. Stir in dry ingredients and mix well. Fill muffin cups almost full. Bake 15-20 minutes or until golden brown. Serve warm. Yields 1 dozen muffins.
