OAT BRAN MUFFINS 
1 1/2 c. Oat Bran Flake cereal
1 c. whole wheat pastry flour
1/2 c. rolled oats
1/2 c. Oat Bran
2 1/2 tsp. baking powder
1/2 tsp. nutmeg
1/2 c. chopped apricots
1 tbsp. grated orange peel
2/3 c. buttermilk, room temperature
1/3 c. apricot nectar
3 egg whites, room temperature
1/4 c. honey
1 tbsp. Canola oil

In a large bowl, mix oat flakes, flour, oats, oat bran, baking powder, and nutmeg. Add apricots and orange rind. In a second bowl, blend buttermilk, apricot nectar, egg whites, honey, and oil with a hand mixer or whisk. Pour liquid ingredients over flour mixture. Stir well until ingredients are mixed. Pour into 12 paper lined muffin cups. Bake at 375 degrees for 18-20 minutes or until muffins are lightly browned. Cool on a wire rack. 144 calories (13% fat).
