BEET SALAD 
2 cans of beets, cut up
1 rib of celery
2 bell peppers

Drain the beets and cut up. Chop up the celery and peppers.

1 tbsp. grated onion
1 c. beet juice
1 c. vinegar
1 c. sugar
2 pkgs. gelatin

Dissolve the gelatin in beet juice and vinegar over heat, add sugar and pour over vegetables. Put in refrigerator and chill.
