FRIED TOMATOES WITH MILK GRAVY 
2 to 3 lg. soft Jersey tomatoes
1 1/2 tsp. butter
1 1/2 c. milk
1/4 c. cornstarch
4 to 5 slices Cooper sharp cheese and/or 1/4 c. Parmesan cheese
Salt, pepper, garlic powder and Italian seasoning may be added if a more spicy flavor is desired

In large non-stick skillet, melt butter. Slice tomatoes and place in pan for 3 minutes. Add milk. After 2 minutes, gradually stir in cornstarch. (Cornstarch is to be mixed with 1/3 cup water so it has a milky consistency.) Add cheese slices. Add salt and pepper to taste. Pour finished mixture over toast or serve with Italian bread on the side.
