SPINACH CHEESE PIE 
1 (9 inch) deep dish pie shell
2 pkgs. (12 oz. each) spinach souffle
1 lb. Monterey Jack cheese, cut in 1/2 inch cubes
1 tbsp. butter

Optional: Sprinkle each layer lightly with nutmeg and Lawry salt.

Prick pie shell with fork and place in 400 degree oven for 6 minutes. Remove from oven and spread with butter while still warm. Spread in 1 package of spinach souffle and sprinkle with 1/2 of the cheese. Spread the remaining package of spinach souffle over this and sprinkle with remaining cheese, pressing cheese into the spinach.

Bake at 375 degrees for 40 minutes. Let set 15 minutes before serving to firm up. Cut in wedges to serve. Serves 6-8.
