CHICKEN CHOW MEIN 
1 can chow mein noodles
2 tbsp. Puritan oil
1/2 c. celery, cut on slant
1 med. onion, cut into eighths
2 tbsp. soy sauce
1 tsp. sugar
1/2 c. chicken broth
1/2 c. bean sprouts
1 c. shredded cooked chicken
1 tbsp. cornstarch
2 tbsp. water

Heat oil. Stir fry celery and onion over high heat 2 to 3 minutes. Separating onion into layers. Add soy sauce, sugar, broth, and bring to a boil. Add bean sprouts and chicken. Dissolve cornstarch in water and add gradually to sauce. Simmer gently until thick. Serve over chow mein noodles.

Serves 2. Recipe may be doubled.

Chicken Chow Mein. Oh My Stars! It is the bomb. Love it. I am always scared to try recipes, do all the work and the taste is awful. Not this time. My family and I went hog wild on this and it is low in calories. I added Bok Choy which I never used before and loved the addition. We served ours up over the crunchy Chinese noodles. yum!
