EGG SALAD & BOLOGNA ROLLS 
8 hard boiled eggs, chopped
1/4 c. chopped green pepper
2 tbsp. chopped stuffed olives
1/2 c. mayonnaise or salad dressing
1 tsp. prepared mustard
1/2 tsp. salt
6 slices bologna
6 hamburger buns
6 lettuce leaves, washed & crushed
butter
6 gherkins

Make egg salad in medium bowl. Combine chopped eggs, green pepper, olives, mayonnaise, mustard and salt; mix well with fork.

Remove bologna rind or casing. Cut tops off rolls. Hollow bottoms slightly. Place a lettuce leaf in each hollow. Top with bologna slices and about 1/2 cup egg salad. Butter top and set on salad at an angle. Garnish each with gherkins. Refrigerate until needed. Serves 6.
