RICE PILAF 
1 c. brown rice
2 tbsp. oil or butter
2 tbsp. chopped onion
2 c. chicken broth
2 tbsp. chopped celery
1/4 tsp. oregano
1/2 tsp. salt

Brown onion and celery in oil or butter. Add rice and brown lightly. Add broth and seasonings. Bring to a boil. Cover and simmer for 45 minutes without lifting lid. Turn off heat and let set on burner for 10 minutes.
