RICE PILAF (BROWN) 
2 tbsp. olive oil
1 sm. onion, diced
1 c. chopped mushrooms
1 bay leaf
1 c. brown rice
2 c. water or vegetable stock, heated to boiling

Heat oil; add onion, mushrooms and bay leaf; saute' until vegetables are tender (5 minutes). Add rice and saute' additional 5 minutes. Add hot water (or stock) and stir to mix; bring to boil, then lower heat, cover and simmer until liquid is absorbed, about 45 minutes.
