CALICO SALAD (Brown Rice and
Corn Salad)
 
1 c. brown rice
1 (7 oz.) can whole kernel corn (drained)
1 c. coarsely chopped green pepper
1 sm. cucumber, chopped
1/3 c. chopped red onion
1/3 c. vegetable oil
2 tbsp. vinegar
1 tsp. salt
1/2 tsp. pepper
1 tbsp. sugar
1 tomato (coarsely chopped)

Cook rice according to package directions. Transfer to bowl. Cover and chill. Add corn, green pepper, cucumber, add onion to rice; mix well.

This is wonderful! The only change I made was to use olive oil instead of vegetable oil, and I used less. I used half of a bag of frozen corn that had been cooked.Great recipe!
