BROWN RICE PILAF WITH NUTS AND
RAISINS
 
3/4 c. golden raisins
1 c. water
1/4 c. onion
2 tbsp. safflower oil
1 c. uncooked brown rice
1 tsp. salt
Dash of pepper
2 1/2 c. chicken broth
1/2 c. mint or cilantro sprigs (optional)
1/2 c. slivered almonds, toasted or plain
Fresh mint or cilantro sprigs for garnish (optional)

Combine raisins and water; let stand for 45 minutes. Drain. Saute onion in 2 tbsp. oil until tender. Add rice and saute 3 minutes. Add salt, pepper and chicken broth. Bring to a boil; cover, reduce heat, and simmer for 45 minutes or until rice is tender and liquid is absorbed. Add raisins, chopped mint and almonds, stirring well. Garnish with fresh mint or cilantro sprigs, if desired. Yields 6 servings.
