PEANUT BUTTER BROWN RICE PUDDING 
3 slightly beaten eggs
2 c. cooked brown rice
1/2 c. peanut butter
1/3 c. honey
1 tsp. ground cinnamon
2 c. milk
1/2 c. raisins

In large bowl combine eggs, cooked rice, peanut butter, honey and cinnamon. Stir in milk and raisins. Turn into a 10x6x2 inch baking dish. Set this dish inside a 13x9 inch dish in oven. Add hot water to 13x9 pan to 1 inch depth.

Bake at 350 degrees for 25 minutes. Stir mixture. Continue baking 20-25 minutes, until knife inserted near center comes out clean. Serve warm or cold with or without Cool Whip/whipped cream.
