VEGETABLE RICE PILAF 
2/3 c. rice
1/3 c. olive oil or vegetable oil
1 1/2 c. fresh vegetables (cabbage, carrots, broccoli, cauliflower, celery)
2/3 c. broken spaghetti
3 c. chicken broth
1/4 tsp. thyme
1/2 c. onion
1/4 tsp. pepper

Heat oil in medium saucepan, add spaghetti broken in 1-inch pieces, stir until golden brown. Add rice, saute until almost all golden brown. Add 3 cups chicken broth, whatever vegetables you have (chopped in chunks), thyme, and pepper. Bring to a boil, cover, simmer 15 minutes.

If using broccoli or cabbage, add last 5-7 minutes. You can also make this dish a little heartier by adding 1 cup chopped cooked, chicken or crab, etc.
