ZUCCHINI POTATOES 
4 baked potatoes
1 med. zucchini, grated
1 c. sour cream
1 c. grated cheese
6 tbsp. butter, melted
Salt & pepper to taste
1/4 tsp. chili powder
Paprika for garnish

While the potatoes are baking, cook the grated zucchini in 2 tablespoons butter. Do not allow it to brown. Hollow out the baked potatoes, saving the skin shells. Whip the potatoes, remaining butter, sour cream, chili powder, salt and pepper, until the mixture is the consistency of mashed potatoes. Mix in the zucchini. Stuff the mixture back into the potato shells. Top with grated cheese and a dash of paprika. Rebake until cheese is melted.
