ZUCCHINI POTATOES 
4 tbsp. butter
4 tbsp. flour
1/2 tsp. salt
1/4 tsp. pepper
2 c. milk
1 zucchini
5 med. potatoes
1 (12 oz.) bag shredded Cheddar cheese
1 med. onion, minced or cut in rings

Preheat oven to 400 degrees. Melt butter over low heat in heavy saucepan. Blend in flour and seasonings. Cook over medium heat, stirring until mixture is smooth and bubbly. Add milk and bring to a boil for 1 minute, stirring constantly. Remove from heat and set aside. Peel and slice zucchini and potatoes. Combine with other ingredients and pour white sauce over and mix together. Cover with foil and bake for 15 minutes at 400 degrees. Remove foil and bake at 350 degrees for 45 minutes (baking time varies depending upon type of potatoes used - longer baking time may be required). 6 to 8 servings.
