SOUTHERN SUFFERING SUCCOTASH
This recipe looks like it is time consuming but is not. Well worth the effort for a delicious dish.

1 lb. breaded okra
8 oz. chunk chicken
1 lb. smoked sausage, sliced
8 oz. fresh or frozen corn
8 oz. yellow or summer squash
1 lb. boiled sliced potatoes (still firm)
8 oz. lima beans, cooked
1 small onion, diced
4 oz. green peppers
oil with butter added
1 tsp. salt
1 tsp. black pepper
1/2 tsp. garlic powder

Best if a wok is used. Add oil and butter as needed. Sauté chopped onions and pepper in oil and remove from skillet. Cook chicken in skillet until done and remove. Cook smoked sausage until heated through.

Sauté corn and squash in skillet then remove. Sauté potatoes and lima beans. Fry breaded okra in a deep fryer (for best results) or the skillet can be used if fryer is not available.

Add all of the prepared items back into the skillet with remaining seasonings and heat to desired temperature.

Variations: chicken or smoked sausage can be omitted and most any desired meat used.
