GEORGIA/FLORIDA SOUTHERN COLLARD
GREENS
 
2 bushels Georgia collard greens, cleaned & stems stripped
1 head cabbage, cut into medium pieces
5 smoked turkey wings
4 tbsp. bacon grease
1 onion, chopped
1 green bell pepper, chopped
1/4 cup hot sauce
3 to 4 tbsp. vinegar
salt and pepper, to taste

Fill large pot. Add bacon grease and fry onion_until translucent then remove.

Fill pot 1/2 full of water, add turkey wings. Cook on medium heat for 1/2 to 2 hours or until tender, remove meat and let cool, cut into bite size pieces.

Add collard greens and cook about 1 hour then add green bell peppers, onions, hot sauce, vinegar and cook for 1/2 hour.

Serve with fried chicken and white rice for a real Southern meal.
