CHEESED ZUCCHINI 
6-8 med. sized zucchini
3 ripe tomatoes, sliced
1 sm. onion, chopped
1 c. Cheddar cheese, grated
1/2 lb. cooked bacon, crumbled

Take zucchini and quarter them lengthwise. Place them in the bottom of a shallow baking dish. Sprinkle with salt, garlic salt, a pinch of oregano and pepper. Place sliced tomatoes on top of zucchini and season as before. Place a layer of onion over tomatoes and season again. Cover with a layer of grated Cheddar cheese. Top with a layer of bacon. Bake 350 for 45 minutes, uncovered.
