ZUCCHINI AND SWISS CHEESE | |
2 lbs. zucchini, sliced 1 lg. onion, chopped coarsely 1 (16 oz.) can tomatoes or 2 c. fresh 1 tsp. minced garlic 1 tsp. sugar 1/4 tsp. pepper 3/4 tsp. basil 1 tsp. salt 1/4 c. flour 6 oz. sliced Swiss cheese Saute onions and garlic in oil (I use olive oil) until onions are soft. Add tomatoes, salt, pepper, basil and sugar. Cook until some of the liquid has cooked down. Add flour, stir, cook a bit. In greased casserole alternate layers of zucchini, tomato sauce and Swiss cheese. Bake at 350 degrees about 30 minutes or until squash is cooked. (Cover casserole while baking.) |
