ZUCCHINI-CHEESE-CASSEROLE | |
3 c. grated zucchini 3/4 c. soda cracker crumbs 1 c. sharp Cheddar cheese, grated 2 well beaten eggs 2 tbsp. chopped onion Salt and pepper to taste Mix all ingredients together in a greased 8 x 8 inch Pyrex casserole dish and bake. Do not add liquid. The zucchini and cheese make their own liquid. Can easily be double. Temperature at 350 degrees. Baking time 45 minutes. Serves 5 to 6. |
