ZUCCHINI - CHEESE CASSEROLE 
1 lb. zucchini, unpeeled, grated
1/4 c. milk
8 oz. Monterey Jack cheese, shredded, divided
2 tbsp. chopped green onions
2 tbsp. chopped parsley
3 tbsp. diced green chilies
1 tbsp. flour
Salt to taste
2 eggs, beaten
1/2 tsp. baking powder
1/8 tsp. cayenne
1/8 tsp. red hot pepper sauce
1 tbsp. melted butter
1/2 c. soft bread crumbs

Combine zucchini, milk, half the cheese, parsley, onions, chilies, flour, salt if desired, eggs, baking powder, cayenne and pepper sauce; mixing well. Turn into round glass cake dish or casserole. Cover.

Microwave on high for 4-5 minutes longer. Stir. Spread evenly over cheese. Microwave, uncovered on high for 2 minutes. Makes 4 servings. Approximately 325 calories.

Since microwave ovens vary in power, you may need to adjust your cooking time.
