ZUCCHINI & CHEESE CASSEROLE 
3 c. cooked rice (white or brown)
1 c. cheddar cheese, grated
3 med. zucchini, sliced into rounds (parboiled)
1/4 c. butter

Layer cooked rice, zucchini and cheese into 9 1/2" x 3 1/2" casserole dish. Dab butter throughout. Bake in 350 degree oven until cheese has melted and dish is bubbly. This can also be cooked in the microwave for about five minutes.

Since microwave ovens vary in power, you may need to adjust your cooking time.
