VEGETABLE CHEESE BAKE 
1 tbsp. oil
1 onion, sliced
1/2 lb. mushrooms, halved
1 sm. zucchini, cubed
1 lg. tomato, chopped
3/4 tsp. thyme
1 c. stuffing mix, dry
2 c. cheddar cheese, cubed or grated
1 pepper, sliced

Heat oil. Add onion and pepper. Saute 3 minutes. Add mushrooms, zucchini and tomato. Saute 3 minutes. Add thyme; cook 1 minute. Spread 1 cup stuffing mix over bottom of buttered casserole (2 quart). Layer half of vegetables. Cover with 1 cup cubed cheese. Put rest of vegetable mixture over cheese. Bake at 350 degrees for 30 minutes, covered. Then sprinkle 1 cup cheese and bake uncovered for 10 more minutes. NOTE: Can be made ahead of time, then reheated in microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
