BRIE EN CROUTE 
1 lb. puff pastry
1 wheel of Brie
1 egg yolk
4 tbsp. heavy cream

Roll out pastry. Place wheel of Brie in center and gather up edges of dough to encase cheese completely. Tie with cotton twine. Trim off excess dough and chill on parchment lined baking sheet for at least 1 hour. Combine egg yolk and cream. Brush the mixture on top of the pastry. Bake 35 to 40 minutes at 350 degrees. Cool on rack. Serve with grapes.
