BAKED TROUT 
2-3 lbs. dressed trout
6 slices bacon
1 thinly sliced onion
3 tbsp. soft butter
2 tbsp. flour
1/2 c. fine cracker crumbs

Heat oven to 375 degrees. Sprinkle trout well with salt and pepper. Spread 3 bacon slices along center of shallow pan; cover with onion; place trout on top. Blend butter with flour; spread on fish; sprinkle with crumbs. Place 3 more bacon slices on fish; bake, uncovered 35 to 45 minutes; or until golden and easily flaked with fork but still moist. Makes 4 to 6 servings. Other fish fillets and fish steaks may be used.

This is absolutely terrific. I adapted a little, using Italian bread crumbs in place of cracker crumbs. Just didn't have any crackers on hand, but it was still great. It was so good that everyone inhaled their plate in a second and caused an hilarious moment when I realized that we were all eyeballing the last piece and each other. I plan to share this with several of my fishing/hunting friends. I am sure they will appreciate a change for trout. I've already told everyone and been backed up by the friends that were their to experience it the first time. Good job!

This is a simple, yet fantastic dish! The cracker crumbs really take away any "fishy" taste sometimes associated with trout. One small tweak I made was to put a very light coat of mayonnaise on the trout right after salting and peppering. I also had some extra onion, so I put that on top of the fish as well as on the bottom. These onions and bacon taste great with a bite of the fish. Enjoy!

The baked trout was delicious however it would have been better if I didn't cook it with the skin on as there was only a hint of bacon flavour. I will certainly try it again with a fillet. My husband thought it was the best fish he's ever had!

Super easy to prepare and cook. 3 of the the 5 of us loved it. Younger kids were not as keen. Adults loved it. Even my husband, who doesn't usually like fish. The flavor was not to overpowering, just enough to add some interest to the fish. I used more bacon than the recipe called for. I forgot to do the butter and flour part. I just put some pats of butter on top of the whole thing. I also used plain bread crumbs instead of cracker crumbs. Turned out nice and tender, moist and not too fishy.
