BANANA PUDDING 
1 c. sugar
3 heaping tbsp. corn starch
4 egg yolks
3 c. milk
1 tsp. vanilla
1 tbsp. butter
3 ripe med. bananas (sliced)
4 egg whites
3 tbsp. sugar
Vanilla Wafers (1 box and use as many as needed)

Mix first 6 ingredients in saucepan. Cook over medium heat, stirring constantly with wire whip until thick and bubbly. Remove from stove and stir in bananas. Line medium baking dish with wafers. Pour in banana mixture. Whip egg whites until soft peaks form.

Continue beating and add sugar slowly. Beat until stiff peaks are formed. Spread meringue on top of pudding and bake at 425 degrees until light brown.
