BANANA PUDDING 
2 c. milk
1/3 c. flour
2 tbsp. butter
1 tsp. vanilla
2/3 c. sugar
1 pinch salt
3 eggs, separated
4 bananas

MERINGUE:

3 egg whites
1 tsp. vanilla
1 pinch of salt
6 tbsp. sugar

Bring milk to scalding point in top of double boiler. Sift together sugar, flour, and salt. Add slowly to scalded milk, stirring constantly. Cook over hot water constantly. When beginning to thicken, add butter and when melted and stirred in good, add egg yolk which is well beaten, still stirring constantly. Cook until thick; remove from heat. Add vanilla. Place layer of vanilla wafers in 10 inch pie plate. Place layer of bananas on wafers; cover with 1/2 of pudding. Repeat with layer of wafers, bananas, and pudding. Top with meringue and brown.

Meringue: Beat egg whites until very stiff; add salt, sugar, and vanilla. Mix well. Recipe can be doubled for large pudding.
