BANANA PUDDING 
1/3 c. cornstarch
1 c. sugar
3/4 tsp. salt
3 c. scalded milk
3 egg yolks, well beaten
1 1/2 tsp. vanilla
20 vanilla wafers
3 lg. ripe bananas, sliced

Mix cornstarch, sugar and salt in double boiler. Pour scalded milk over this mixture. Cook over boiling water until mixture thickens, stirring almost constantly. Cover and cook 15 minutes; stirring occasionally. Add hot mixture, very slowly to beaten egg yolks; stirring constantly. Return to double boiler and cook 2 minutes; let cool and add vanilla.

Put alternating layers of vanilla wafers, banana slices and pudding mixture in 1 1/2 quart casserole; having top layer pudding. Garnish with banana slices and whole vanilla wafers; let cool, then chill before serving. Slow to make, but well worth the trouble.
